Chef Zachary Melillo got his start in the “dive bars” of Fredericksburg, Virginia – his hometown – but later moved to Hampton Roads to attend the Culinary Institute of Virginia. He cooked his way from prep cook at our sister restaurant Becca, also located in the Historic Cavalier Hotel, to his current Executive Chef position here at the Hunt Room. Melillo has a talent for creating new and exciting dishes with unique, uncommon ingredients. Hunt Room guests can discover these dishes on the regular menu and in the Chef’s popular weekly specials.
